My mom made this recipe and took to many gatherings. My daughter, granddaughter and I use it as comfort food. We do skip the rolling in coconut. We usually eat it out of the bowl, and sometimes with banana's.
BANANA CROQUETTES
Ingredients:
bananas
2 eggs, well beaten
2/3 Cup sugar
3 Tablespoons water
1 teaspoon vinegar
Heaping Tablespoon peanut butter
Flaked coconut
Directions:
Cook together eggs, sugar, water and vinegar until thick.
Remove from heat.
Add peanut butter
When cool
roll bananas in the coating and then in coconut.
